L'ORIGINE DU MOT "PHO" / ORIGIN OF THE WORD "PHỞ", 2021
It was in the war time where Vietnamese people had to be sent to France to work. There was a man named Huỳnh who was assigned to be the chef of the Vietnamese in Marseille. Every morning he would shout “Feu, Feu, Feu” which means fire to signal to turn on the stove for beef soup with bread. The Vietnamese people skipped breakfast a lot due to the differences in the food culture, so Mr. Huỳnh thought of adding some traditional Vietnamese ingredients to the beef soup. How wonderful to taste the flavor of home in a different country, everyone supported the food. To the French’s surprise, they tried and also really enjoyed it, they asked: “What is the name of this dish that you shout Feu Feu every morning? “ Chef Huỳnh replied: “That’s because it’s called Phở ”
And so for my project I would like to cook Phở, present a sculpture and tell this story to the customer while serving the food.
